Cerebelly Blueberry Oat Bars

Ingredients

  • 1 Cerebelly Purple Carrot Blueberry Smoothie pouch
  • 2 cups rolled oats, (blended into oat flour)
  • 1 ripe banana, mashed (or ¼ cup unsweetened applesauce)
  • 1 egg, (or flax egg: 1 tbsp flaxseed + 3 tbsp water)
  • ¼ cup milk, (or non-dairy alternative)
  • 2 tbsp coconut oil, or melted butter
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • ½ cup fresh blueberries, (optional)

Directions

  1. Preheat the oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.
  2. Blend 1 ½ cups rolled oats into a fine flour. Transfer to a bowl and mix with the quick oats, cinnamon and baking powder.
  3. In a separate bowl, whisk together the smoothie pouch, mashed banana, egg, milk, coconut oil, and vanilla.
  4. Combine wet and dry ingredients and mix until well incorporated. Spread the batter evenly into the prepared baking dish and top with fresh blueberries (optional).
  5. Bake for 18-22 minutes, or until the edges are lightly golden and the center is set.
  6. Cool completely before cutting into bars. Store in an airtight container in the fridge for up to 5 days or freeze individually wrapped bars for up to 3 months.
