Ingredients

  • ½ cup mashed banana, about 1 large banana
  • ½ cup shredded apple, about 1 small apple
  • ¼ cup shredded carrot, about 1 small carrot
  • 1 Sweet Potato Banana Blueberry Smoothie pouch
  • ¼ cup olive oil, or melted unsalted butter
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1 cup whole wheat flour
  • ½ cup rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

Directions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, combine the mashed bananas, shredded apple, shredded carrot, Cerebelly pouch, olive oil, egg, and vanilla extract.
  3. Then whisk together the whole wheat flour, rolled oats, cinnamon, baking powder, baking soda together.
  4. Stir the wet ingredients into the dry ingredients until just combined. The batter should be moist, but not too runny. If it feels too wet due to the extra liquid from the pouch, you can add a little more flour to balance it out.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for about 18-20 minutes (15 minutes for mini muffins), or until a toothpick inserted comes out clean.
  7. Let the muffins cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
