Cerebelly’s Purple Carrot Blueberry Smoothie creates a fruity blueberry filling that thickens beautifully on the stovetop before being tucked into flaky, golden puff pastry pockets.
Purple Carrot Blueberry Hand Pies

Ingredients

  • 1 package puff pastry sheets, thawed
  • 2 pouches Cerebelly Purple Carrot Blueberry Smoothie
  • 1 cup fresh or frozen blueberries, optional for extra texture
  • 2 tbsp cornstarch or arrowroot powder
  • 2 tbsp maple syrup, optional for sweetness
  • 1 egg, for egg wash
  • 1 tbsp water, for egg wash

Directions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small saucepan, combine the contents of the Cerebelly Purple Carrot Blueberry Smoothie Packs, blueberries, cornstarch, and maple syrup (if using). Cook over medium heat, stirring frequently, until the mixture thickens (about 3–5 minutes). Remove from heat and let cool.
  3. Roll out the puff pastry sheets on a floured surface and cut into rectangles or circles (about 4x4 inches or 3-inch rounds). Place a small spoonful of the cooled filling in the center of each pastry piece. Be careful not to overfill to avoid leakage. Fold the pastry over the filling to form a pocket and press the edges with a fork to seal. Use a knife to make 1–2 small slits on top for venting.
  4. Beat the egg with 1 tbsp of water, then brush it lightly over the top of the hand pies for a golden finish. Place the pies on the prepared baking sheet and bake for 15–20 minutes, or until golden and puffed up.
  5. Let the hand pies cool slightly before serving and enjoy.
