Grinch Pancakes (with Cerebelly Purée)

Ingredients

  • 1 Cerebelly Spinach Apple Sweet Potato purée pouch
  • 40 g baby spinach, lightly packed
  • 100 g very ripe banana, about 1 small banana
  • 2 eggs
  • 150 g milk, dairy or non-dairy
  • 1 Tsp vanilla extract
  • 1 Tsp cinnamon (optional)
  • 120 g whole wheat flour, spooned and leveled
  • 2 Tsp baking powder

Directions

  1. In a blender, combine the Cerebelly purée, spinach, banana, eggs, milk, vanilla, and cinnamon (if using). Blend until completely smooth and bright green.
  2. In a medium bowl, whisk together the flour and baking powder. Pour the blended mixture into the dry ingredients and stir gently until just combined. Don’t overmix — a few small lumps are fine.
  3. Heat a lightly greased nonstick skillet over medium heat. Pour 2–3 tablespoons of batter per pancake.
  4. Cook until bubbles form on top and edges look set (about 2–3 minutes), then flip and cook 1–2 minutes more. Serve warm with yogurt, fruit, or a drizzle of maple syrup.
